Bowl ‘o summer goodness right here, you guys. It’s the grilled chicken mango salad of your actual dreams. And FYI there’s no summer salad I’ll make this year that isn’t my absolute favorite.
It’s the season of salads, y’all! You’ve gotta love ’em all. And if you’re like me, you have no choice but to eat them all.
All day. Every day. Rinse and repeat. Hey, it’s good for us!
So basically what we’ve got here is: Honey garlic grilled chicken √ Mango √ FETA √ Plenty of greens √ Cilantro vinaigrette √
Dinner all week? That’s an obvious heck yeaaaaaaaaaaah.
And yes I’m one of those people. I make a big freaking batch of salad and you KNOW that’s getting eaten every dang day until it’s gone.
Several basic steps before we head to mango chicken salad land >>
Marinate that dang chicken. It’s just a simple 4-ingredient, 30 minute marinade but it is unbelievably good and you 1000% CANNOT SKIP IT. Sweet, sticky, flavorful, and chicken goals.
Equally important is our cilantro vinaigrette. For those of you who can’t stand cilantro, you can totally use parsley or another milder herb, but I personally LOVE the extra boost of flavor the cilantro gives it.
Remaining salad components include sliced red onion, romaine lettuce, TONS of mango, and even more tons of feta. Hello perfection.
I tell ya, big loaded summer salads like this are what summer’s really all about, y’all.

Honey Garlic Grilled Chicken Mango Salad with Cilantro Dressing

Ingredients
Honey Garlic Chicken
- 1/4 cup honey
- 4 cloves garlic
- 2 tablespoons soy sauce
- 1/4 cup vegetable oil
- Salt and pepper to taste
- 1-1/2 lbs boneless skinless chicken thighs
Salad
- 4 cups chopped romaine lettuce
- 2 medium mangos, peeled, pitted, and diced
- 1/4 cup crumbled feta cheese
- 1 small red onion, thinly sliced
Cilantro Vinaigrette
- 1/2 cup fresh cilantro
- 1 clove garlic
- 3 tablespoons lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
Honey Garlic Chicken
- In a medium bowl, whisk honey, garlic, soy sauce, oil, and salt and pepper to taste. Add chicken to bowl and toss to combine. Let stand 30 minutes in the refrigerator
- Remove chicken from marinade and grill over medium-high heat 4-5 minutes per side, flipping once until chicken registers 160F. Cool chicken a few minutes then dice into medium chunks.
Salad
- In a large bowl, combine all salad ingredients and top with grilled chicken. Refrigerate until ready to serve.
Cilantro Dressing
- In a food processor or high-speed blender, blend dressing ingredients until smooth. Season with salt and pepper to taste.
- When ready to serve, toss dressing into salad until combined. Serve immediately and enjoy!

Made it for my residents tonight. Was easy to replicate and turned out very nice. I was nervous to make the vinaigrette bc I’m not used to making sauces but it blended very well with everything else.

Absolutely delicious, made it today for our family of 5, and it was demolished. I actually added two thick slices of mango to the salsa/dressing before I whizzed it, and it was superb….

We grilled the chicken and served with rice. Then sliced up leftover chicken and made the salad for lunches the next day. Love the char you get on the chicken due to the honey. And the combination of the ingredients in the salad are all delicious. I just added some chickpeas since I had some on hand in the fridge
