Marinated for hours in a flavorful lemon ginger soy sauce and then grilled to perfection, this lemon ginger soy marinated grilled chicken is SO insanely juicy it’ll quickly become a grill favorite!

Do I dare make a claim so bold that this chicken is THE grilled chicken of the summer? I am so serious.
Yes, I know there are plenty of chicken in the sea (?) as far as grilling season goes…
…but lemon ginger soy marinade has currently and permanently stolen my heart.

I can’t even describe to you how magical this chicken marinade is, guys. Do yourself a favor and put this chicken on the grill-out agenda for the Fourth of July weekend and yes, I do mean every.single.day.
It’s a thing of magic when you don’t even wanna mess with burgers or hot dogs on the biggest grill-out week of the year. Just a big mess of this chicken will suffice.

Disclaimer: I normally try to stay away from pics of raw chicken but I HAD to show y’all the freaking beauty of this marinade. For something that comes together so fast with such simple, humble ingredients it packs a GINORMOUS flavor punch. >>>
We’ve got fresh ginger (and yes, you MUST use fresh, trust me) fresh minced garlic (again, FRESH is a must) lemon juice, soy sauce, a little bit of olive oil, and fresh minced parsley. A few grinds of salt and pepper and you’ve got literally the most deceivingly life-changing marinade right at your fingertips.
I like to marinade this chicken overnight and sometimes not even remove it from the marinade until mid-afternoon the next day, however, if you’re in a time crunch 2 hours minimum is what I would recommend.

Just know that the longer you let the chicken soak up all that goodness, the more INSANELY juicy and packed full of flavor it’ll grill up to have. Seriously, you can taste the ginger, soy, and lemon shine through in every fantastic bite and it is to die for.
Best served with a cold beer and a large-ish ear of sweet corn nearby. Happy freakin Fourth!!

Lemon Ginger Soy Marinated Grilled Chicken
Ingredients
- 1/4 cup lemon juice
- 2 tablespoons minced fresh ginger
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 tablespoons minced fresh parsley
- Salt and pepper to taste
- 1 lb boneless skinless chicken breasts
Instructions
- In a large bowl, whisk lemon juice, ginger, soy sauce, olive oil, garlic, parsley, salt and pepper until smooth. Add chicken to bowl and submerge it in the marinade. Cover bowl and marinate chicken in fridge at least 2 hours or overnight.
- Remove chicken from marinade and pat dry. Grill chicken over medium-high heat, turning once until chicken registers 160F. Serve chicken hot and enjoy!

Hi Marnie! I would recommend pan-searing the chicken in a little oil on the stove. Then finish cooking it in a 350F oven for 15-20 minutes until the chicken registers 165F.
