Choosing Your Nacho Base
In the spirit of St. Patrick’s day we opted to go with a waffle fries base for these nachos so you get that hearty, crispy potato in every bite. Using waffle fries gives you a flat nacho base that holds the cheese, corned beef, and other toppings very well.
If you don’t have waffle fries on hand, this recipe will also work with other cuts of fries as well as the standard tortilla chips. Be aware, you will need to adjust the bake time if you change the fries shape or use tortilla chips.
Tips for Perfect Nachos
- Par-bake waffle fries – before adding any toppings, you will want to par-bake the frozen waffle fries 30-35 minutes until golden brown and crispy.
- Use leftover corned beef – this recipe works great if you have leftovers! Thinly slice the beef and dice into bite-sized pieces for the nachos.
- Top nachos with toppings after baking – you will want to bake only the cheese and corned beef on the nachos – wait until after baking to add the rest of the toppings.

Corned Beef Nachos

Ingredients
- 1 package (24 oz) waffle-cut fries
- 1-1/2 cups shredded Irish white cheddar cheese
- 1-1/2 cups diced corned beef
- 1/2 cup sauerkraut, drained and squeezed dry
- 1/2 cup pickled jalapenos
- 1/2 cup sliced green onions
- 1 medium tomato, diced into 1/4-inch cubes
- Sour cream for serving
Instructions
- Preheat oven to 400F Line a large sheet pan with parchment paper and arrange waffle fries in a single layer on sheet pan. Bake waffle fries at 400F 30-35 minutes until waffle fries are a light golden brown and crispy.
- Remove waffle fries from oven and top with cheddar cheese and corned beef. Return to oven and bake nachos at 400F an additional 10-15 minutes until cheese is melted.
- Remove nachos from oven and top with sauerkraut, pickled jalapenos, green onions, and tomato. Serve individual servings of nachos with a dollop of sour cream. Enjoy!
