I feel like burgers are the summer norm as far as sandwiches go and while I love a good burger, there’s plenty of room for other sandwiches on the agenda!
Although after making these blackened chicken sandwiches, you may never make any other one again and for good reason.

These sandwiches are just about as low-key as it gets and you can have them on the table in only 30! They pair so great alongside a big summer salad, french fries, or roast potatoes.
Although honestly, just pass me two of these and I’m a happy camper.

Making the Blackened Chicken

- Mayonnaise
- Garlic
- Honey
- Cabbage

Choosing Your Chicken
I recommend using boneless skinless chicken thighs for this recipe. This cut of chicken is fast to cook up on the grill and turns out super tender and juicy every time.
If you don’t have thighs on hand, boneless skinless chicken breasts will work great instead, however, you may need to adjust the cook time slightly if they are thicker breasts. Always use a kitchen thermometer to test the internal temperature of meat.

Tips for Perfect Blackened Chicken
- Use ripe avocado for slaw – pick out a riper avocado so it will mash into a smooth paste.
- Grill chicken – I include stovetop/oven versions below, but I highly recommend grilling the chicken if possible for the best flavor!
- Toast buns – this warms the bread and adds a great texture to the sandwiches.
Recipe Variations
Try these ideas for a different twist on these sandwiches.
- Adjust heat level – the spice rub for this chicken is not spicy, however, you can make it spicy by adding cayenne pepper or red pepper flakes.
- Add more sandwich toppings – try leafy lettuce, tomato slices, bacon, or pickles.
- Use a regular slaw – you can use a slaw mix + dressing to speed along prep for these sandwiches.
Stovetop and Oven Instructions
Don’t have a grill? You can make this recipe on the stovetop or in the oven instead!
Stovetop: Heat 1 tablespoon vegetable oil in a large skillet (or brush over a large cast iron grill pan) Once pan is hot, add chicken and sear on both sides until chicken registers 165F. Note: if you are using a thicker cut of chicken, such as a chicken breast, I recommend searing chicken on both sides, then finish cooking in a 400F oven 5-10 minutes.
Oven: Arrange chicken in a single layer on a greased sheet pan. Bake at 400F 20-25 minutes until chicken registers 165F. Optionally, broil chicken 1 inch from heat 2-3 minutes to crisp up the outside.

- 1 medium ripe avocado, pitted and diced
- 1/4 cup mayonnaise

Instructions
Avocado Slaw
- Place avocado in a large bowl and mash well with a fork. Fold in mayonnaise, garlic, and honey until smooth. Toss in cabbage and green onion until evenly coated in dressing. Season slaw with salt and pepper to taste and refrigerate until ready to serve.
Blackened Chicken Sandwich
- In a small bowl, paprika, cumin, onion powder, garlic powder, chili powder, salt, and pepper. Place chicken thighs on a plate and rub spice mixture all over until evenly coated.
- Lightly grease the grates of a grill and preheat to 400F. Add chicken to grill and cook, turning occasionally until chicken registers 165F.
- Place chicken thighs on toasted buns and top with slaw and additional avocado slices and green onions. Serve sandwiches immediately and enjoy!
