You’re looking at our summer 2026 salad obsession. We always have one and somehow it almost always ends up being a panzanella salad.
I know, shocking, consider 50% of the salad is made up of bread, LOL.

This salad didn’t come to play in the flavor department though. We’ve got a mess of summery peaches, lots of tomatoes, fresh-picked basil from my garden, and a delightfully-oniony shallot dressing coating every inch of this salad goodness.
I mean, I’m almost embarrassed to admit how many times this salad is on our dinner agenda these days but can ya blame me?

Making the Panzanella Salad

Ingredients You Will Need
- Olive oil
- Shallot
- White balsamic vinegar
- Honey
- Dijon mustard
- Dried basil
- Bread cubes
- Tomatoes
- Peaches
- Fresh basil
- Fresh mozzarella
Choosing Your Bread
A hearty artisan loaf of bread works best for panzanella salad. Try French bread, sourdough, ciabatta, or another type of rustic bread.
Ideally, you will want to choose one of these drier varieties of bread without much fat in it because the bread cubes get toasted until crisp and completely dried out before adding to the salad.

Tips for Perfect Panzanella Salad
- Sauté shallot for dressing – a quick sauté in olive oil to soften the shallot will help it break down in the dressing.
- Blend dressing in blender or food processor – either of these tools work great for making the dressing.
- Toast bread at 400F – toss the bread cubes in olive oil, salt, and pepper and allow to roast 8-10 minutes until bread is a light golden brown and dried out.
- Tear basil into bite-sized pieces – this is a very basil-heavy salad and you will want bigger pieces so you get a burst of basil in every bite.
- Assemble salad just before serving – for best results, do not assemble salad until just before serving. This will keep the bread crisp and all the ingredients fresh.

Peach Panzanella Salad

Ingredients
Shallot Balsamic Dressing
- 1 tablespoon plus 1/3 cup extra-virgin olive oil, divided
- 1 small shallot, minced
- 1/4 cup white balsamic vinegar
- 1 tablespoon honey or agave nectar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried basil
- Salt and pepper to taste
Peach Panzanella Salad
- 5 cups bread, cut into 1-inch cubes (French bread, sourdough, or ciabatta)
- 1 tablespoon extra-virgin olive oil
- Salt and pepper to taste
- 2 large tomatoes, cored and cut into 1-inch cubes
- 2 medium ripe peaches, pitted and cut into 1/2-inch slices
- 1/2 cup firmly-packed basil leaves, torn
- 4 oz fresh mozzarella pearls (optional)
Instructions
Shallot Balsamic Dressing
- Heat a small skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat pan and add shallot. Sauté shallot over medium-high heat 2-3 minutes until translucent and softened.
- Transfer shallot to a blender or food processor along with white balsamic, honey, mustard, and basil. Blend on high while drizzling remaining 1/3 cup olive oil through top until dressing is smooth. Season dressing with salt and pepper to taste and store in refrigerator until ready to use.
Peach Panzanella Salad
- Preheat oven to 400F. Line a large sheet pan with parchment paper and add bread cubes. Drizzle olive oil over top and season with salt and pepper. Toss bread cubes until evenly coated and arrange in a single layer.
- Bake bread cubes at 400F 8-10 minutes until a light golden brown. Allow to cool several minutes.
- Once bread is cooled, gently toss in a large bowl with tomatoes, peaches, basil, and mozzarella if using. Drizzle dressing over top and gently toss until evenly coated. Season salad with salt and pepper to taste and serve immediately. Enjoy!
