Tomato sandwiches are main food group around here lately along with this pasta so really, we’re thriving out here in tomato land.

This pasta though, like wow. It’s such a simple concept with using the white wine as a major sauce component alongside the tomatoes but it’s still blowing my mind.
We’ve got juicy tomatoes, a background of crisp wine, tons of herby basil, and why yes, that IS chunks of burrata melted on top, thank you very much!

Ingredients You Will Need
- Olive oil
- Cherry tomatoes
- Shallot
- Garlic
- Granulated sugar
- White wine
- Pasta
- Basil
- Burrata or mozzarella
- Parmesan cheese
Choosing Your Tomatoes
I recommend using either cherry tomatoes or grape tomatoes for this pasta. This smaller shape of tomatoes have a sweet flavor and break down quickly making it ideal for a quick sauce like this one.

Tips for Perfect Burst Tomato Pasta
- Saute cherry tomatoes whole – no need to halve the cherry tomatoes, just toss them around in olive oil until beginning to burst.
- Deglaze pan with white wine – this helps release any browned bits on the bottom of pan making for a more flavorful sauce.
- Use fresh garlic and basil – using these ingredients fresh adds lots of flavor to the pasta.
- Add a pinch of sugar – this softens the acidity from the tomatoes a bit.
- Cook pasta to al dente – the pasta will continue to cook once added to the sauce so make sure not to overcook it during boiling.
- Save pasta cooking water – a splash of pasta water will help loosen up the sauce a bit.

White Wine Burst Tomato Pasta

Ingredients
- 2 tablespoons extra-virgin olive oil
- 16 oz cherry tomatoes
- 1 medium shallot, minced
- Kosher salt and pepper to taste
- 3 medium cloves garlic, minced
- 1 teaspoon granulated sugar
- 3/4 cup dry white wine
- 12 oz pasta, cooked according to package instructions to al dente and 1/2 cup pasta cooking water reserved
- 1/4 cup firmly-packed torn basil leaves
- 4 oz burrata or fresh mozzarella cheese, torn into chunks
- Grated Parmesan cheese and additional basil for serving
Instructions
- Heat a large skillet over medium-high heat. Add olive oil to skillet and swirl to evenly coat. Add cherry tomatoes and shallot to pan, season with salt and pepper, and toss over medium-high heat 3-5 minutes until tomatoes are starting to burst. Add garlic and sugar and cook 1 additional minute until fragrant.
- Pour white wine into pan and use a wooden spoon to scrape up any browned bits. Bring sauce to a simmer, then reduce to medium-low and allow to simmer 3-5 minutes until white wine is reduced by about half, smashing a few tomatoes against pan to release juices occasionally.
- Add pasta and basil to tomatoes and cook 1-2 additional minutes over medium heat until pasta is tender, adding reserved pasta cooking water as needed to thin pasta.
- Season pasta with salt and pepper to taste and arrange burrata chunks on top. Top with additional Parmesan and basil and serve warm. Enjoy!
