My favorite part about these wraps is that it’s one of those recipes that helps you repurpose leftovers! Leftover chicken works great here and I highly encourage you put it to good use in these wraps.

Ingredients You Will Need
- Honey
- Lime juice
- Dijon mustard
- Olive oil
- Arugula
- Cooked chicken
- Mango
- Avocado
- Cucumber
- Red onion
- Feta cheese
- Flour tortillas
Choosing Your Chicken
This recipe works great with any kind of leftover cooked chicken! We love it with grilled chicken, roast chicken, rotisserie chicken, or poached.
You will need about 1 lb cooked chicken total for these wraps. You can shred it, dice it, or thinly slice it, anything works here!

Tips for Perfect Wraps
- Thinly slice vegetables and mango – this will make the wraps much easier to eat without the filling falling out.
- Don’t overfill wraps – if you put too much filling in the wraps, the tortillas will break when you try to fold them. Make sure you leave enough of a tortilla border around filling so you can fold it.
- Fold wraps burrito-style – this means folding the horizontal sides of wrap inwards and then tightly rolling tortilla vertically over filling, using your fingers to push filling into tortilla as necessary while rolling.
- Cut wraps in half for serving – this makes for a beautiful cross-section and makes the wrap easier to eat.
Recipe Variations
Try these ideas for a different twist on these wraps.
- Swap out fruits – try using peaches, plums, or nectarines in place of the mango.
- Use a different cheese – try goat cheese, fresh mozzarella, or gouda in place of the feta.
- Make it into lettuce wraps – for a low-carb version, use Bibb butter lettuce leaves in place of the flour tortillas.
- Use bottled dressing – to speed along prep for these wraps, try using a Greek or Italian dressing in place of the homemade.
Make Ahead Instructions
Follow these instructions for time-saving make ahead ideas.
- Make dressing – the dressing stores well in refrigerator up to 6 days.
- Cook chicken – cooked chicken may be stored in refrigerator up to 6 days.
- Slice mango, cucumber, and red onion – slice these ingredients and refrigerate up to 3 days. For best results, wait to slice avocado until just before assembly so they don’t turn brown.
- Assembly – once wraps are assembled, they are best if served immediately but they can also be stored in refrigerator up to 3 days for a quick grab-and-go lunch.

Chicken Mango Wrap

Ingredients
Honey Lime Dressing
- 3 tablespoons honey
- 3 tablespoons lime juice
- 1 teaspoon Dijon mustard
- 3 tablespoons extra-virgin olive oil
- Salt and pepper to taste
Chicken Mango Wrap
- 2 cups lightly-packed arugula or spring greens
- 1 lb cooked diced chicken (grilled or roasted)
- 1 medium mango, thinly sliced
- 2 medium avocados, thinly sliced
- 1 small cucumber, thinly sliced
- 1 small red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 5 burrito-sized flour tortillas
Instructions
Honey Lime Dressing
- In a small bowl, whisk together honey, lime juice, and mustard. Slowly drizzle in olive oil, whisking constantly until smooth. Season dressing with salt and pepper to taste. Set aside
Chicken Mango Wrap
- Arrange arugula, chicken, mango, avocado, cucumber, red onion, and feta between tortillas, arranging ingredients in the center of each tortilla, Drizzle top with honey lime dressing.
- Tightly roll up wraps burrito-style and slice each wrap in half for serving. Enjoy!
