So. I kinda have the most awesome mash-up of breakfast and lunch EVER stuffed into one glorious sandwich today.
Brunchin’ it up, today guys. In the cheesy direction. Coincidentally, just like last week….WHOAA!

So do you guys wanna know what my latest obsession is? (besides these sammies) It’s called Trivia Crack and I pretty much spent this entire past weekend playing it. The addiction is REAL.
Sports trivia questions though….They are the DEVIL. How the heck should I know and why would anyone even CARE how many home runs Derek Jeter made in his career?!

Okay, we are somehow waaaaaay off topic and I get the feeling that you guys are slowly moving towards that “x” on the top of your screen. I guess I’d better focus on this grilled cheese business.

So I’m curious…how many of us are constantly getting stuck in that darn breakfast rut? I’m pretty much ALWAYS stuck in one, I’m sad to report….Oatmeal is currently my breakfast bestie and I am slooooowly working on trying to turn that rut around.
I would happily agree to be stuck in a rut with this grilled cheese anywhere, any day, and EVERY DAY.
In other news, I am cautiously breaking up with the oats and making my move to go steady with Scrambled Egg Grilled Cheese in the get-me-outta-this-rut-asap breakfast department.
If these sammies aren’t bringing breakfast to a new SKY-HIGH level of epicness, I don’t know what will.
That waterfall of cheese though. I think it could convince me of anything.
Ohmygoshohmygoshohmygosh.
Firstly, I am seriously crushing on All.The.Gooey.Mozzarella combined with the uber-fluffy scrambled eggs….
MUAH! And they lived happily ever after in their house of grilled cheese.
Secondly, I am obsessed with the SPEED of these sammies. For real, it takes 5 minutes to cook up the scrambled eggs, about 1 minute to slice up some mozzarella and bread….
5 minutes to cook it all up with the BUTTAH….
0.3498 seconds to inhale.
Nom, nom, NOM!
If you lost count, that’s 11.3498 seconds in total. You just CANNOT beat the awesomeness that these mighty breakfast sammies hold.
And I’m not even gonna try to tell you guys how much I’m seriously crushing on these.♥

Scrambled Egg Grilled Cheese
Ingredients
- 6 large eggs lightly beaten
- 2 tablespoons minced fresh parsley
- 2 cloves garlic minced
- Salt and pepper to taste
- 6 slices bread
- 3 slices mozzarella cheese
- 2 tablespoons softened butter
Instructions
- Heat a nonstick skillet over-medium high heat. Pour eggs into skillet and add parsley and garlic. Stir over medium-high heat until eggs are cooked. Season with salt and pepper to taste.
- Divide scrambled eggs between 3 slices of bread and top eggs with a slice of cheese. Top with remaining bread to form 3 sandwiches.
- Spread butter on both sides of bread and cook grilled cheese in batches in a saucepan over medium-high heat 2 to 2-1/2 minutes on each side or until golden and cheese is melted. Cut sandwich in half and repeat with remaining sandwiches.
- Serve grilled cheese immediately warm.

I make scrambled egg cheese sandwiches on toast all the time…but grilled??? BRILLIANT! Can’t wait to try this…maybe with a thin slice of ham one day, with bacon another day..the possibilities are endless! Can’t wait to grill one up!
