The one and only reason I look forward to rolling out of bed lately cause I mean, CMON who can resist one of these crispy babies exploding with fluffy scrambled eggs and cheese??

No worries if you’re one of those people that’s short on time in the morning because this grilled cheese can conveniently be made in only 15 minutes flat. Anything that’s ready that fast and stuffed with this much cheese deserves a breakfast award in my opinion.

Choosing Your Bread
This grilled cheese works with a variety of bread types. I recommend going with a heartier rustic loaf such as ciabatta, Italian, sourdough, or multi-grain.

Tips for Perfect Grilled Cheese
- Cook eggs over medium heat – fold the eggs several times until just set.
- Shred cheese manually – I recommend shredding your cheese yourself instead of relying on pre-shredded cheese. It will melt much better.
- Use a combination of mozzarella and cheddar – these two cheeses compliment each other very well and give the grilled cheese a rich, gooey texture.
- Cook grilled cheese over medium heat – don’t be tempted to bump the heat up otherwise the outside of grilled cheese will burn before the cheese melts.
Recipe Variations
Try these ideas for a different twist on this grilled cheese.
- Use another cheese – gouda, gruyere, swiss, or provolone also work great in this grilled cheese.
- Add meat – try adding a few strips of cooked bacon, deli-sliced turkey, ham, or chicken, or sausage.
- Swap in another fresh herb – try parsley, dill, or basil in place of the chives.
- Make it into a quesadilla – use a burrito-sized flour tortilla in place of the bread for a breakfast quesadilla.

Scrambled Egg Grilled Cheese

Ingredients
- 5 tablespoons unsalted butter, softened
- 6 large eggs, lightly beaten
- 1 tablespoon minced fresh chives
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 slices ciabatta or other rustic bread
- 1 cup shredded low-moisture mozzarella cheese
- 1 cup shredded cheddar cheese
Instructions
- Heat a medium nonstick pan over medium heat. Add 1 tablespoon butter and swirl to evenly coat pan. Pour eggs into pan and use a flexible spatula to gently fold eggs several times until eggs are set. Remove eggs from heat and fold in chives, garlic powder, and salt and pepper to taste.
- Place bread slices on a cutting board and butter each slice with remaining butter. Place bread butter-side down on cutting board.
- Layer shredded mozzarella, cheese, and scrambled eggs on other half of bread slices. Top with opposite slices to form a sandwich.
- Working in batches, cook grilled cheese in a large nonstick skillet over medium heat 3-4 minutes per side until grilled cheese is golden brown and cheese is melted. Repeat cooking with remaining grilled cheese.
- Serve grilled cheese immediately warm and enjoy!

This was the best sandwich, Sarah! I made two yesterday! I had to cut the recipe into thirds so I could make just one sandwich at a time but the flavor was still amazing. I didn’t have parsley so I thawed some frozen spinach and mixed it in the eggs. So, so delicious!
