So I guess the theme for this week is unofficially all things fresh and fruity.
I mean, Tuesday we had fruit in our cookies. Today there’s a gorgeously berry-PINK smoothie in your face. And still yet to come is MORE fruity goodness tomorrow. (just you wait)
The pouring rain outside tells me it’s spring. So do the bajillion pounds of berries I currently have sitting in my fridge, so I shall not ignore.
Smoothies for everyone. Sip ‘er up!
Amigos and amigas, I present to you the tropical smoothie to end ALL the tropicalness. Step aside, tropical french toast. Hit the road, orange cinnamon rolls. Mr. Pina Colada Smoothie is stealing the spotlight today. Sorry.
Except I’m really not. Sorry, that is…
Moving right along here. Let’s talk about all the fabulous components in these tropical sippers.
- Pina colada flavors. Coconut, banana, pineapple and MAYBE even a little bit of boozy rum if you’re feeling adventurous.
- Strawberries. Because berries mean err’thing to me right now.
Oh, oh! And we can’t forget….
The coconut milk. Hello, game-changer.
And it really, REALLY is one, trust me guys. It brings all the flavors together like POW! Don’t sub regular milk or I seriously might cry.
And can I just say a word about the protein powder addition? The coconut milk may be a game-changer, but the protein powder? It’s a LIFE-CHANGER. Just two itty-bitty tablespoons of the stuff transforms this smoothie into a KILLER energy-boost and pretty much the best post-workout rejuvenate ever.
I can practically feel my energy level rising just staring at these pictures. And I swear it’s not just because I’m drinking coffee right now either….
My family sipped these smoothies down so fast I seriously feared all their brains would freeze up and I’d have to unfreeze them with hot chocolate.
Actually it was more like gulping, if you want to be accurate…

Strawberry Piña Colada Protein Smoothie

Ingredients
- 2 cups fresh strawberries hulled and halved
- 1 cup frozen pineapple chunks
- 1 medium banana cut into chunks and frozen
- 1/4 cup unsweetened shredded coconut
- 2 tablespoons vanilla protein powder
- 1-3/4 cups coconut milk
Instructions
- Combine all ingredients in a blender and blend on high speed until smooth and creamy. Serve immediately.
