It is a very good thing that calories don’t count on a Friday, you guys. Otherwise you and I might be in big trouble right now.
Big trouble involving the fact that apple cobbler with browned butter biscuits isn’t really the end-all-be-all kinda diet food.
But on a Friday…I can totally pass this entire pan off as breakfast, dessert, and/or midnight snack without a second thought. Because…you know, that whole calorie count thing not being in effect during the weekend.
You like how I’m all convincing and basically the worst food influence ever? You should still listen to me anyway, guys. I bring a strong case to the table.
So honestly, this apple cobbler felt a little weird to be making when it’s obviously fall now. I’ve always associated most cobblers and crisps to be a summer thing, but that thinking has completely gone out the window because fall-style cobbler? It’s the real freaking DEAL.
First off, we have to talk about that biscuit topping. I mean, it’s browned butter biscuits, you guys. Ultra-flavorful, ultra-flaky, ultra-freaking awesome is the gist of it. I’m obsessed, you’re obsessed, we’re all obsessed and on board with browned butter in every corner of our cobbler.
The apple filling for this cobbler is pretty basic. Sliced apples, cornstarch, sugar, lemon juice, and a few spices are what’s up. We’re gonna pre-cook the filling just a little bit on the stove first and then the WHOLE thing gets dumped in your pan. Biscuits get thrown on top, and the whole thing gets thrown in the oven.
The waiting game is obviously the hardest part here, y’all. Ho-huuuuuuum.
But shortly later…things are looking very good in apple land.
Which by the way, is totally what you should just call my blog from here on out to probably December.

Apple Cobbler with Browned Butter Biscuits

Ingredients
Filling
- 6 medium apples peeled, cored, and thinly sliced
- 2 tablespoons cornstarch
- 1/2 cup coconut sugar or brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Topping
- 2 cups white whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup coconut sugar or brown sugar
- 1/2 cup butter melted and browned on stove until a deep golden brown.
- 1 cup milk
- 2 tablespoons half-and-half cream
Instructions
- Preheat oven to 350F. Lightly grease a 9x13 baking pan. Set aside.
- In a small bowl, combine all filling ingredients. Transfer to a medium skillet and cook over medium heat until apples are just slightly softened, but not entirely cooked. Transfer to prepared pan and set aside.
- Make the filling: In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, and sugar. Stir browned butter and milk into dry mixture until just combined.
- Scoop biscuit dough over apples and gently spread a little bit to cover the apples. Brush biscuit topping with cream.
- Bake cobbler at 350F 25-30 minutes or until biscuits are golden and apples are tender and bubbly. Cool cobbler 10 minutes then serve warm. Enjoy!

Counting calories while eating is the toughest part to do. I am a food lover, I make varieties of food but then while eating I push myself to avoid overeating. But Yipeeee it’s weekend and on weekend no calorie count. 🙂
