Thanksgiving leftover turkey sandwiches are all fine and good, but what about a leftover turkey WRAP? For all my wrap peeps, you’re looking at the ultimate day-after-Thanksgiving lunch.
It’s nothing fancy, we’ve just got thick slices of turkey, a few different kinds of cheese, fresh avocado, sun-dried tomatoes, and a secret weapon: creamy hummus.
Shove it all together in one wrap and there’s absolutely no going wrong in the lunch department today.
It’s almost laughable to even call these wraps a recipe because it’s made kinda leftover-style which means there’s no cooking at all, just piling everything up in the center of a tortilla, giving it a quick fold, and lunch is served.
BRB, I’m eating these wraps all weekend with my leftover turkey and you’d be wise to do the same.

Choosing Your Tortillas
I recommend using 10-inch burrito-sized tortillas for these wraps. This larger size will hold all the fillings with plenty of room for snug folding ensuring that everything stays tightly wrapped inside.
Tips for Perfect Wraps
- Don’t overfill wraps – if you put too much filling in the wraps, the tortillas will break when you try to fold them. Make sure you leave enough of a tortilla border around filling so you can fold it.
- Fold wraps burrito-style – this means folding the horizontal sides of wrap inwards and then tightly rolling tortilla vertically over filling, using your fingers to push filling into tortilla as necessary while rolling.
- Cut wraps in half for serving – this makes for a beautiful cross-section and makes the wrap easier to eat.
Recipe Variations
Try these ideas for a different twist on these wraps.
- Use a different meat – try cooked chicken, bacon, roast beef, or ham.
- Try a different cheese – sharp cheddar, mozzarella, goat cheese, or swiss all work great in this wrap.
- Add more vegetables – try adding sauteed sweet peppers, mushrooms, or spinach.
All the components in these wraps are so simple, but man do they ever work gloriously together! The creaminess from the hummus and avocado, all those tangy sun-dried tomatoes, and the thick slices of turkey and cheese make for the ultimate wrap.

Turkey Hummus Wrap with Sun-Dried Tomatoes

Ingredients
- 1/2 cup hummus
- 4 burrito-sized flour tortillas
- 2 cups firmly-packed spring greens mix
- 4 slices smoked or regular gouda cheese
- 4 slices Havarti or provolone cheese
- 8 slices turkey breast
