Leftover brisket is the perfect meaty base for this creamy, flavorful BBQ beef brisket dip that goes great with chips, crackers, or as sandwich spread!

Never have I ever wished for leftover beef brisket as much as I have been the past few weeks which as it turns out, is a very niche thing to crave. It’s all because of this dip.
All my Costco peeps, you know exactly what the inspiration was for this one. We absolutely adore the brisket dip from Costco in this house so naturally I set out to be extra and make my own homemade version.
And spoiler alert: I love you forever, Costco, but this homemade dip definitely has a bit of an edge.

I blame it solely on the fact that I added more brisket and barbecue sauce, whoops. A heavy hand of green onions on top didn’t hurt things much either.

- Cream cheese
- Greek yogurt
- Barbecue sauce
- Green onion
- Garlic
- Brown sugar

Choosing Your Brisket
I recommend choosing leftover shredded brisket for this recipe. The fine shreds pair very well in the creamy base and will easily incorporate into the other ingredients.
You can also use leftover sliced brisket if that’s what you have on hand but I would recommend finely dicing the brisket prior to adding to the dip.

Tips for Perfect Brisket Dip
- Soften cream cheese – allow the cream cheese to come to room temperature so it incorporates smoothly into the other ingredients.
- Use fresh garlic and green onion – this gives the dip a flavorful onion-y background.
- Add more meat, barbecue sauce, and green onion on top – for obvious reasons! More is more here.
Recipe Variations
Try these ideas for a different twist on this dip.
- Make it spicy – add hot sauce, a minced jalapeno, or cayenne pepper to taste.
- Use another protein – try shredded rotisserie chicken or pulled pork in place of the brisket.
- Add cheese – add a handful of shredded cheddar or jack cheese.
- Use neufchatel – this is a lower-calorie replacement for the cream cheese.
Serving Suggestions
This dip stores well in refrigerator up to 6 days making it ideal for a make-ahead appetizer! I recommend letting the dip soften at room temperature for about 20 minutes prior to serving.
For dippers, pretty much anything goes here! We love potato chips, tortilla chips, crackers, cut vegetables, or crostini.

Y’all, I’m just gonna put out the warning. If you’re anything like me without an ounce of self-control once the snacks are pulled out you might wanna pass on this one. This dip is seriously so creamy and meaty with just a touch of sweet + smoky flavor that is simply to die for.
Absolutely the best thing you could ever put on a chip, hard stop.

BBQ Beef Brisket Dip

Ingredients
- 8 oz cream cheese, softened
- 3/4 cup plain Greek yogurt
- 1/4 cup barbecue sauce
- 1/4 cup minced green onion
