Or as I like to call ’em, peach crisp in popsicle form! A dream come true if you’re a streusel freak like me and need it in every corner of your life.
I’m talking ribbons of brown sugar streusel tucked inside fresh peach goodness and frozen into the ultimate summer popsicle. Such a simple concept but WOW, my mind is still blown by these.

These popsicles were especially a hit with my husband. He recently decreed that our freezer will never not be stocked with these all summer and trust me, I’m fully on board with that mindset.
We may in fact need a bigger freezer…

Making the Popsicles

Ingredients You Will Need
- All-purpose flour
- Brown sugar
- Cinnamon
- Unsalted butter
- Peaches
- Greek yogurt
- 2% or skim milk
- Honey
- Vanilla extract
Choosing Your Peaches
You will need about 2 lbs ripe fresh peaches for this recipe which typically ends up being about 4 medium peaches for me. Weigh the peaches for the closest accuracy then use a peeler and paring knife to peel, pit, and dice.
Frozen peaches will also work in this recipe, however, I do recommend thawing them for smoother blending.

Tips for Perfect Popsicles
- Bake streusel crumbs – 5-7 minutes at 350F will give the crumbs a nice crunchy texture.
- Choose ripe peaches – ripe peaches will give these popsicles a sweet and juicy peach flavor.
- Use blender or food processor to puree fruit – I prefer a blender as this gives plenty of room for the ingredients to puree smooth, but a food processor also works.
- Layer streusel in popsicles – fill the molds about halfway full with the peach mixture and top with half the crumbs. Repeat the layers one more time ending with the crumbs on top. This method of layering the fruit + crumbs will give you a perfect ratio in every bite.
- Freeze popsicles at least 4 hours – I typically prefer freezing these popsicles overnight to give them plenty of time to set up.
Recipe Variations
Try these ideas for a different twist on these popsicles.
- Use another stone fruit – try nectarines, apricots, or plums in place of the peaches.
- Try a mix of fruits – try half peaches and half cherries, mango, or pineapple.
- Skip the streusel – you can easily skip the streusel if you prefer just pure fruit popsicles.
Storing Popsicles
These popsicles store well in freezer up to 2 months. I like to remove them from the molds once frozen and store them in resealable bags to save on freezer space.

These really are kinda like peach crisp meets popsicle and I’m still kinda in awe over here. The layers of brown sugar streusel work SO well and provide a welcome little sugary crunch in between all that frozen peach goodness.

Peach Popsicles with Brown Sugar Streusel

Ingredients
Brown Sugar Streusel
- 1/2 cup all-purpose flour (spooned and leveled)
- 1/4 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted
Peach Popsicles
- 2 lbs (about 4 medium) ripe peaches, peeled, pitted, and diced
- 1/2 cup plain Greek yogurt
- 1/2 cup 2% or skim milk
- 1/4 cup honey or agave nectar
- 1 teaspoon vanilla extract
Instructions
Brown Sugar Streusel
- Preheat oven to 350F. Line a small sheet pan with parchment paper and set aside.
- In a medium bowl, combine all streusel ingredients until crumbly. Spread crumbs into an even layer on prepared sheet pan. Bake streusel at 350F 5-7 minutes until a light golden brown. Allow streusel to cool completely.
Peach Popsicles
- Combine all popsicle ingredients in a blender or food processor until smooth, scraping down sides as necessary.
- Pour half of mixture into popsicle molds. Top with half of streusel and repeat layers. Freeze popsicles 4 hours or overnight until popsicles are solid. Enjoy!
