Don’t worry, we’re not actually eating almond joys for breakfast, just taking inspiration from the candy and sticking it into addictive granola form.
Crunchy, chocolate-y, can’t-stop-face-shoving granola. Meet your new breakfast MVP.

Like the classic candy bar we all know and love, the main flavors of this granola feature almonds, coconut, and tons of chocolate. You’ll only need 8 ingredients total to make it and about 10 minutes prep time!
The real challenge here is waiting for it to bake. The heavenly smells that are about to fill your kitchen…

Making the Granola

Ingredients You Will Need
- Oats
- Flaked coconut
- Sliced almonds
- Cocoa powder
- Coconut oil
- Maple syrup
- Kosher salt
- Semisweet chocolate chips

Tips for Perfect Granola
- Choose old-fashioned rolled oats – do not substitute quick-cooking oats for this recipe as they have a very different texture.
- Use coconut oil – melted coconut oil gives this granola an incredible light and crunchy texture.
- Bake granola at 300F – this low temperature will keep the almonds and oats from burning.
- Stir granola halfway through baking – this helps evenly crisp up every inch of the granola.
- Add chocolate after baking – adding the chocolate after baking will keep it from burning.
Recipe Variations
Try these ideas for a different twist on this granola.
- Use another nut – try pecans or walnuts in place of the almonds.
- Try another chocolate – replace the semisweet with dark or white chocolate.
- Add fruit – fold 1/2 cup dried cranberries or cherries to granola after baking.
Storing Granola
This granola stores well in an airtight container at room temperature up to about 2 weeks. Make sure you let the granola fully cool to room temperature before storing.
To serve granola, spoon a few handfuls over vanilla Greek yogurt, serve as a cereal with milk, or mix it into dried fruit or chocolate-covered raisins for a delicious trail mix.

Basically like eating candy for breakfast but you can kiss that guilt goodbye! This granola is so light, crunchy, and absolutely impossible to stop pulling clusters of off the sheet pan.

Almond Joy Granola

Ingredients
- 3 cups old-fashioned rolled oats
- 1-1/2 cups unsweetened shredded coconut
- 1 cup sliced almonds
- 2 tablespoons unsweetened cocoa powder
- 1/4 teaspoon kosher salt
- 1/2 cup melted coconut oil
- 2/3 cup maple syrup
- 1-1/2 teaspoons vanilla extract
- 1/4 cup semisweet chocolate chips
Instructions
- Preheat oven to 300F and line a large sheet pan with parchment paper. Set aside.
- In a large bowl, combine oats, coconut, almonds, cocoa, and salt. Pour coconut oil, syrup, and vanilla over top and fold well until combined.
- Spread granola in an even layer in prepared pan. Bake granola at 300F 40-45 minutes, stirring once halfway through baking, until granola is a light golden brown.
- Sprinkle chocolate chips over warm granola and fold until melted. Allow granola to cool completely then break into chunks. Enjoy!
