You’ve just found your new favorite breakfast! This simple overnight blueberry french toast bake is unbelievably moist inside, loaded with berries and covered every inch in an irresistible buttery streusel!
The time has come for me to reveal my latest breakfast obsession to you guys. (!!!) Step aside strawberry shortcake in pancake form. Move over perfect scrambled eggs. French toast bake and I are currently goin’ steady.
I’m excited here, guys. This whole panful of beautiful breakfast glory is just doing that to me. I can barely even concentrate right now because I’m currently having a terrible french toast withdrawal.
It’s because of this heaven right here in my prettiest casserole dish. ♥ Hoooooozzzzzzaaaaaaaah!
So are we all into those lazy-don’t-wanna-be-in-the-kitchen-summer-days yet? Is it weird that I’m not?? I mean, just because it’s nearly July doesn’t mean that those freshly-baked cookie cravings just go away! That would be a REALLY sad thing, guys.
In other words, I’m still cravin’ my kitchen, but I’m also aware of the fact that a lot of people ain’t got time for any of those time-sucking hobbies right now. (unless you happen to run a food blog for a living) It’s summertime which means go, go, GO-time! Bring on the speed and the EASE.
And all the french toast bakes this girl can eat.
Let me lay out all the awesomeness of this french toast in a few words: Pay attention because I don’t wanna repeat myself or I might seriously swoon from the awesomeness.
- There’s streusel. Buttery, crumbly, pick-me-off-I’m-so-good STREUSEL.
- There’s blueberries and a LOT of ’em. They literally explode their juicy summery goodness in every bite.
- The bread cubes are SO freakin’ moist and literally melt in your mouth! Not a super-big surprise since they swim around in a luscious sweet egg sauce for hours and soak up all that rich, luscious magnificence. ♥
Yikes that was definitely more than a few words….
I prefer to refrigerate this casserole overnight first of all, because of the EASE. All you have to do the next morning is pop it in the oven and wait for the magic to happen.
Secondly, because the longer you let the bread cubes soak = A softer, moister and more rich-tasting texture and flavor. Which then gets even MORE intensified once sprinkled to death with buttery streusel + juicy berries and then baked to golden, faceplant-worthy perfection.
Holy freaking YUM.
Seriously, the smell alone of this french toast baking will bring all the neighbors to your door demanding WHAT-THE-HECK-is-that-awesome-smell-and-oh-gosh-are-you-giving-out-samples??

Blueberry Streusel French Toast Bake

Ingredients
- 1 loaf 16 slices day-old bread, cut into 1/2 in cubes
- 8 large eggs lightly beaten
- 2 cups milk
- 1/4 cup whipping cream
- 3/4 cup coconut sugar or brown sugar
- 1 tablespoon vanilla extract
- 1 cup fresh or frozen blueberries if using frozen, do not thaw
- STREUSEL:
- 1/3 cup white whole wheat flour
- 1/3 cup coconut sugar or brown sugar
- 1/3 cup cold butter cubed
- 1 tablespoon milk
- 1/4 teaspoon nutmeg
- Maple syrup for serving optional
Instructions
- Place bread cubes in a greased 9x13 baking pan. Set aside.
- In a large bowl, whisk eggs, milk, cream, sugar, and vanilla until completely smooth. Pour egg mixture evenly over bread cubes. Cover pan with plastic wrap and refrigerate overnight (at least 6 hours)
- Remove pan from refrigerator and arrange blueberries over top. Set aside while you prepare the streusel.
- In a medium bowl, combine all streusel ingredients until crumbly. Sprinkle evenly over french toast mixture.
- Bake french toast bake at 350F 50-55 minutes or until middle is completely set and top is golden-brown. Cool french toast bake 10 minutes then serve with maple syrup if desired.
