In all honesty, I’m typically not a gyro kind of girl, but these grilled steak gyros have COMPLETELY 180-ed that mindset.
It’s just really, really hard not to love juicy grilled steak, cucumber feta salsa, and homemade tzatziki sauce all lovingly piled into a soft pita bread. ??
Basically we’re ticking all the classic gyro boxes and then some. I’m personally not the hugest fan of the classic lamb in gyros so a steak version was a no-brainer.
Marinating it in a garlicky herb lime marinade and slapping it on the grill was also a very easy decision and I would 10/10 recommend. We gotta ready ourselves for ALL the summer eats.
That means we’re gonna fire up that dang grill. And we’re gonna use all the fresh produce we can get our hands on.
Let’s get down to steak gyros business! I also strongly suggest you bring a big appetite.
Firstly, let’s talk marinade. Plan ahead, because this steak requires at least a one hour marinade in just a quick garlic + herb + lime + olive oil marinade. Super simple, yet GAME-CHANGING in transforming a basic cut of steak into an incredibly juicy flavorful steak once grilled.
While the steak is marinating, you’ll have plenty of time to prep the other gyro components. >>
This means a quick cucumber feta salsa + homemade tzatziki sauce cause we GOTTA have the classic gyro sandwich fillers.
From there, it’ll just be a quick trip to the grill for the steak, let it rest a few minutes to keep all those juices inside, then slice VERY thinly against the grain into strips.
Then pile all.da.goods in a few soft pita breads with a crisp bed of lettuce. ?
I highly recommend serving these the classic way with a few wedges of lemon for some extra flavor zing. And make sure you grab a thick stack of napkins, things WILL get messy.

Grilled Steak Gyros with Cucumber Feta Salsa and Tzatziki Sauce

Ingredients
Grilled Steak
- 1-1/2 pounds flank steak
- 3 tablespoons olive oil
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 tablespoon fresh minced oregano
- Salt and pepper to taste
Cucumber Feta Salsa
- 1 medium cucumber, cut into 1/2-in cubes
- 2 small roma tomatoes, cut into 1/2-in cubes
- 1 small jalapeno, seeded and finely minced
- 1/2 cup crumbled feta
- 2 tablespoons fresh minced parsley
- 2 tablespoons lime juice
- Salt and pepper to taste
Tzatziki Sauce
- 1-1-/2 cups plain Greek yogurt
- 1/2 cup minced cucumber
- 2 tablespoons lemon juice
- 1 clove minced garlic
- 2 tablespoons fresh minced parsley
- 2 tablespoons fresh minced mint
- 6 pita breads and lettuce leaves for serving
Instructions
Grilled Steak
- Pat steak dry and place in a ziplock bag. In a small bowl, whisk olive oil, lime juice, garlic, and oregano until smooth. Season with salt and pepper to taste. Pour marinade over steak and seal bag. Let marinate at least 1 hour.
- Remove steak from marinade and place directly on a preheated grill. Grill 2-3 minutes per side until steak reaches your desired doneness (I would recommend a medium to a medium-rare cook)
- Cover steak with tin foil and let rest 10 minutes. Thinly slice steak against the grain.
Cucumber Feta Salsa
- In a small bowl, combine all salsa ingredients. Season with salt and pepper to taste. Refrigerate until ready to use
Tzatziki Sauce
- In a small bowl, whisk all sauce ingredients until smooth. Season with salt and pepper to taste. Refrigerate until ready to use.
- To assemble gyros, Place a lettuce leaf on each pita bread and top with grilled steak, salsa, and tzatziki sauce. Serve immediately and enjoy!
