It’s popsicle season, do not despair.
Instead, make popsicles like ya’ just don’t caaaaaare.
My secret’s out: I’m the worst poet ever. I seriously sat there for like 10 minutes trying to think of something witty that rhymed with “care” and came up with NADA.
And that, my friends is why I failed the poetry section in English class.
Sooo, let’s just talk about popsicles instead. I’m a little better at talking about food than trying to make stupid words rhyme.
Let’s be honest here: Are there ANY adults out there who are as nuts about popsicles as I am? I mean sure, they’re kind of a kid-food, but they are SO. DANG. GOOD I could literally eat about 5000 of them in one afternoon.
No shame.
I always feel so childish sitting in the middle of my kitchen smacking on a popsicle, but I don’t care. It’s SO worth it, and I have never been one to skip out on something sweet just cause it’s not very adult.
News flash: Popsicles are NOT just for kids.
My kid-side always comes out in full swing whenever I have popsicles in my freezer. Must be ‘somethin in those popsicle molds.
Speaking of which, I finally got my hands on some REAL popsicle molds. Goodbye, Dixie cups!

These popsicles? Summer city, peeps. We’ve got strawberries in ’em, so that covers all the summer bases; and then we’ve got chocolate on top so that takes care of the sweet decadence that all popsicles should have.
It’s actually kind of embarrassing how easy these popsicles are to make.—-It’s not even really a recipe, it’s so simple. You’re only going to need 5 ingredients. Yes, FIVE.
3 ingredients are for the popsicles themselves, and the other 2 are for the chocolate drizzle.—Fresh strawberries, sweetener, and lemon juice for the pops. Semisweet chocolate chips and a minuscule amount of oil for the drizzle.
Simplicity-CITY, guys!
And really, who could resist the glorious combination of strawberries and chocolate?! If you’ve seen these muffins, you would know that I personally believe it’s the best combo on the planet.
Surprise, surprise. It works well in popsicles too.
C’mon, was that really a surprise? I think we all know that even turnips could taste amazing in popsicle form.
Okaaaay, yeah. That does sound kinda gross. I would never go so far as to sneak turnips into popsicles. That’s just wrong on so many different, disturbing levels.
HOW-EVER. The strawberries and choc? It just works in these popsicles.
They taste like chocolate-covered strawberries. ‘Ya know, the fancy ones that you spend $45 bucks on around Valentines Day to give to your honey and then you end up eating half the box yourself.
Good stuff, guys. Good stuff.
These strawberry pops are sweet, tangy, LOADED to the max with strawberry flavors and then drizzled to PERFECTO with chocolate.
Glorious, glorious chocolate. 😀

Chocolate-Covered Strawberry Popsicles

Ingredients
- POPS:
- 4 cups sliced strawberries
- 1/2 cup xylitol or sugar
- Juice from 1/2 lemon
- CHOCOLATE:
- 1/2 cup semisweet chocolate chips
- 1 teaspoon vegetable oil
Instructions
- Prepare the pops: Place all pop ingredients in a food processor and pulse several times until mixture is smooth. (scrape down sides if necessary) Fill 8 popsicle molds 3/4 full of strawberry mixture and insert popsicle stick (or mold top) in the middle. Freeze popsicles until completely firm, about 2 hours. Remove popsicles from mold and store in freezer.
- Prepare the chocolate drizzle: Place chocolate chips and oil in a double-boiler and melt over medium heat, stirring constantly until smooth.
- Remove from heat and quickly drizzle chocolate over strawberry popsicles. (work fast, because the chocolate will harden quickly. Place popsicles back in freezer to set for about 10 more minutes before serving.
