These chocolate covered strawberry popsicles feature a rich chocolate shell coating fresh strawberry popsicles. Only 7 simple ingredients needed!

Strawberry popsicles are getting a major revamp in the direction of ALL the chocolate today! Everyone loves a chocolate-covered strawberry, so why not do the same to your popsicles??
Fair warning: it may ruin all other popsicles for you and you will likely feel inclined to keep these stocked in your freezer at all times.
Honestly, I see no problem with this plan.

No fancy ingredients or methods around today! These popsicles are pretty much as simple as any summertime dessert can get with only a handful of ingredients and most of the time being inactive while you’re waiting on the popsicles to freeze.
These Strawberry Popsicles feature…
- A sweet and tangy fresh strawberry popsicle base
- A chocolate shell coating dusted with freeze-dried strawberries
- Minutes to prep and only 7 ingredients needed

Making the Popsicles

Ingredients You Will Need
- Strawberries
- Honey
- Lemon juice
- Greek yogurt
- Vanilla extract
- Dark or semisweet chocolate
- Coconut oil
Fresh vs. Frozen Strawberries
This recipe works great with both fresh or frozen strawberries. For fresh strawberries, wash berries well, hull, and dice into medium cubes. If you decide to go the frozen route, thaw strawberries and dice prior to blending with other ingredients.

Tips for Perfect Popsicles
- Use blender or food processor – I prefer a blender as this gives plenty of room for the ingredients to puree smooth, but a food processor also works.
- Choose ripe strawberries – ripe strawberries will give these popsicles a super strong strawberry flavor.
- Freeze popsicles at least 4 hours – I typically prefer freezing these popsicles overnight to give them plenty of time to set up.
- Melt chocolate with coconut oil – the coconut oil will help the chocolate set into a firm, yet bite-able texture on the popsicles.
- Dip popsicles in chocolate – dip the frozen popsicles in chocolate and immediately dust in freeze-dried strawberries if using so they’ll stick to the chocolate before it hardens.
Recipe Variations
Try these ideas for a different twist on these popsicles.
- Use another fruit – try raspberries, blackberries, or a mix of several fruits.
- Add a banana – add 1 medium ripe banana to blended fruit mixture.
- Skip the chocolate coating – for regular strawberry popsicles just skip the chocolate dip.

Biting through the rich chocolate coating down into all that fresh strawberry goodness is an experience like no other with these popsicles! Be warned though, having 1 of these usually turns into like 4.

Chocolate Covered Strawberry Popsicles

Ingredients
- 2 cups diced fresh strawberries
- 1/4 cup honey or agave nectar
- 1 tablespoon lemon juice
- 1/4 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1/2 cup dark or semisweet chocolate chips
- 1 tablespoon coconut oil
- Crushed freeze-dried strawberries for garnish, optional
Instructions
- In a blender or food processor, blend strawberries, honey, lemon juice, Greek yogurt, and vanilla until smooth, scraping down sides as necessary.
- Pour strawberry mixture into popsicle molds and freeze 4 hours or overnight until popsicles are solid.
- Place chocolate chips and coconut oil in a microwave-safe bowl. Microwave 1 minute on high, stirring at 15-second intervals until chocolate is smooth and melted.
- Line a sheet pan with parchment paper. Remove popsicles from their molds and dip in melted chocolate mixture. Place popsicles in a single layer on sheet pan and immediately sprinkle with crushed freeze-dried strawberries if desired. Freeze popsicles 10 minutes until chocolate coating is firm. Store popsicles in freezer until ready to serve. Enjoy!
