- Strawberries
- Maple syrup
- Water
- 2% or skim milk
- Steel-cut oats
- Salt
Fresh vs. Frozen Strawberries
Both fresh and frozen strawberries work great in this recipe! If using frozen, there is no need to thaw them before roasting, you just may need to add a few additional minutes to cook time.

Tips for Perfect Strawberry Steel-Cut Oats
- Roast strawberries in maple syrup – maple syrup is the perfect sweetener for roasting as it gives a lovely complex flavor to the strawberries.
- Use half water and half milk for oatmeal – using half milk will give the oats a rich and creamy flavor.
- Cook oatmeal over low heat – steel-cut oats take a bit longer to cook than other oats and low and slow is the best way to go for the creamiest texture.
Recipe Variations
Try these ideas for a different twist on this oatmeal.

Roasted Strawberry Steel-Cut Oats

Ingredients
- 2 cups fresh or frozen strawberries, sliced
- 4 tablespoons maple syrup, divided
- 1 cup water
- 1 cup 2% or skim milk
- 1/2 cup steel-cut oats
- Pinch salt
- Milk for serving
Instructions
- Place strawberries in a single layer on a greased baking sheet. Drizzle with 2 tablespoons maple syrup. Roast strawberries at 400F 10-15 minutes until strawberries are soft and juicy.
- In a medium saucepan over medium-high heat, bring water and milk to a simmer. Stir in oats, reduce heat to low, and allow to cook over low 10-15 minutes, stirring frequently until oatmeal is soft and creamy. Remove from heat and stir in remaining 2 tablespoons maple syrup and salt.
- Divide oatmeal between two bowls and top with roasted strawberries and milk. Serve immediately and enjoy!
