Thanks to a little help from the almighty za’atar seasoning, I think we’ve got a winner!

Za’atar Roasted Cauliflower and Chickpeas

Ingredients
- 1 medium head cauliflower, chopped into 1-inch florets
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 2 tablespoons za'atar seasoning
- 3 medium cloves garlic, minced
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Tahini for drizzling, optional
- 2 tablespoons minced fresh parsley
- 1/4 cup pine nuts, toasted
Instructions
- Preheat oven to 400F and lightly grease a large sheet pan. Set aside for a moment.
- In a large bowl, combine cauliflower, chickpeas, olive oil, za'atar seasoning, garlic, lemon juice, and salt and pepper to taste. Arrange in a single layer on prepared sheet pan.
- Roast cauliflower and chickpeas at 400F 20-25 minutes until crispy and tender. Drizzle with tahini if desired and top with fresh parsley and pine nuts. Enjoy!
