And feta. LOTS of feta.
Sorry, am I a little too enthusiastic it being a Monday and all? I can’t help it. This past weekend was a good one and my high spirits are carrying into the workweek.
This is gonna be a GOOD week, I can tell. Even though I work double shifts for 3 days straight this week, I’m not gonna let that crush my good mood.
Good grief, I am freakishly optimistic today…
I’m blaming my happiness solely on this salad. And possibly these muffins that I had for breakfast yesterday too…

K, let’s put my goofiness aside for a moment and talk nuts. Not the crazy kind of nuts. The crunchy, GOOD stuff, guys.
So y’all know Diamond Nuts right? If not, PLEASE get your hands on some of their nuts. Their nuts are literally “nuts.”
Anywho, Diamond Nuts recently sent me a box FULL of nuts along with several salad recipes and gave me the challenge of creating my own salad twist.
Naturally, I reached for the package of pine nuts first and dug out some avocados and tomatoes….
And feta. Lots of feta.
Give me feta or give me death. My family doesn’t understand my obsession with feta. They don’t know how much creamy, soft cheese heaven they’re missing out on, but I’m not about to tell them. They might discover that they love feta too and then that would put a serious dent in my feta-stash.
Recently, I even got my hands on some garlic herb-flavored feta cheese. Aaaand my life is complete. 😀
This salad is pretty much a medley of all things summery. The simple combo of tomatoes and avocados works SO well together, which is then brightened up by fresh basil, lotsa’ nuts, even MORE feta cheese, and lastly is doused in a simple lime vinaigrette.
My family’s favorite way to enjoy this salad is alongside marinated grilled chicken with some just-baked bread and of course, generous slices of watermelon.
We love our summer dinners around these parts. 😀
You MUST try this salad before avocados and tomatoes go out of season. I plan on making this salad at LEAST weekly, since I have about 2 million tomatoes currently sitting on my counter.

Tomato Avocado Salad with Pine Nuts + Feta
Ingredients
- 5 medium heirloom tomatoes halved and thinly sliced
- 2 medium ripe avocados sliced
- 1/3 cup pine nuts toasted
- 1/3 cup crumbled feta cheese
- 2 tablespoons minced fresh basil
- LIME DRESSING:
- 1 lime juiced
- 2 tablespoons olive oil
- 1 teaspoon white vinegar
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 garlic clove minced
Instructions
- In a large serving bowl, combine tomatoes, avocados, nuts, feta, and basil.
- In a small bowl, whisk dressing ingredients until smooth. Pour over salad and toss to coat.

Sounds like I need to get my hands on some garlic herb feta too! I love how fresh this dish looks. I’ve never had avocado and feta together, but boy do they look like a match made in heaven in this dish!
